Building a quality guitar is very detailed and exacting work.  This environment, sunrise to sunset makes concentration on the task at hand a lot easier.  The luster, beauty, and durability of a finish is very much a product of how the finish is applied and allowed to dry.  The desert is a perfect place to get that perfect setup.  Adding just the right amount of humidity to the air is much easier than taking it out.
